        DETAILS OF HOW TO USE THE TEST STRIPS
        You have sulphite test-strips. Their active end, which you put into the meat and don't touch with your fingers, has a small white square on it. There is a colour scale on the outside of the in the plastic bag.
        In addition, you will need the following, all rinsed and dried thoroughly between uses: Measuring teaspoon, Small glass tumbler, Small fork, Chilled water, Knife.
        Buying the meat samples
        Best to buy the samples fresh, keep cool and test as soon as you get home. Friday afternoon is a good time because those butchers who use sulphites illegally often wait until the inspectors are unlikely to call. Ask for 250g. Make sure that you label the bag with the date and name of the butcher so there can be no mix-ups.
        Testing the meat sample.
        1. Put two teaspoons of chilled water into the tumbler.
        2. Slash open the plastic bag containing meat. Make a diagonal cut in it with a clean knife to expose the centre of the meat. Scoop out a teaspoon full from one end of the cut surface, level with the knife if needed, and drop into the tumbler. Repeat, taking the sample from the other end of the cut surface.
        3. Thoroughly macerate the mince and chilled water with the fork so that it is a uniform sludge. This takes about 15 seconds to do properly.
        4. Without touching the active end of the Sulphite test strip, dip the active end into the mince sludge for one second. Make sure that it is thoroughly wetted by wriggling it around.
        5. Take out of the sludge, flick clean and time exactly 30 seconds. You can rinse briefly with cool water to get any meat off the active end.
        6. Compare the colour of the active end with the colour scale supplied. Put the active end and the colour scale side by side and try the next higher and the next lower to be certain.
        7. Write down the reading. Note that meat contains some sulphites anyway from the high level of protein, so some pink colour is expected.
        8. Don't panic if you get 80ppm. The calculation is to take 80 from the reading and then multiply by 2. Therefore a reading of 80 is 0 ppm. A reading of 180ppm is 200ppm after correction. ppm means parts per million.
        Rapid strip test
        Sulphite test strips (Merckoquant strips, Merck Pty Ltd) are available
        commercially. Briefly, 10g of minced meat is mixed in 20 mL of water,
        filtered and the resulting filtrate is adjusted to pH 12 with 1 M NaOH. A
        strip is dipped into the filtrate and examined against a colour scale to
        give an approximate value. They can be used, and have been used, by
        concerned individuals; however, the manufacturer acknowledges that
        this method can have interference from the cysteine or glutathione in
        the meat which will give a false positive.

        This test paper is recommended for the rapid detection of sulphites and gaseous sulphur dioxide. The white paper turns pink to brick-red in the presence of sulphite or free sulphur dioxide. The paper does not react with sulphites in acidic solutions. These have to be neutralized with solid sodium acetate. Thio-sulphates only interfere with the determination of gaseous sulphur dioxide.Limit of sensitivity: 10 mg/l Na 2 SO 3Note: sulphite test paper can also be used for medical-diagnostic purposes as a rapid test for sulphite oxidase deficiency.

        {WUHAN - INDUSTRIAL and commercial authorities in Wuhan, capital of Central China's Hubei province, have shut down an underground workshop producing tofu products under a fake brand name.


        The tofu appeared in the markets of Central China's Hubei and Hunan provinces in recent months.

        Hao Jinqi, an official with the industrial and commerce bureau of Dongxihu district, Wuhan, told China Daily that they raided the illegal workshop in the city's Zhanggongdi area after receiving a report and inspecting the premises. 'There was production equipment worth more than 300,000 yuan ($58,750) and raw materials,' Mr Hao said.


        The packaging used on the tofu resembled that used by Dean Fa Food to such an extent that it even bore anti-counterfeit laser film labels. 'The laser label printing machine is worth about 8 million yuan and the printing house must be a pretty large one,' said Yang Shuaifeng, of Dean Fa Food.}

        Nothing is sacred when Tofu gets counterfeited. Notice they went to great lengths to reproduce the laser labels that Dean Fa Food made, and spent at least $1.2mil on defeating anti-counterfeit measures. (Tony Zafiropoulos)

        CHINA – Two factories in Wuhan, Hubei province, China, have been shut down by local authorities for producing fake tofu products using chemical ingredients including isolated soy protein and pigment.

        The two unlicensed plants packaged the fake tofu under the trademark of a legitimate food company located in Jiangsu province, Jiangsu Dianfa Food Ltd, then sold them at markets in Hunan and Hubei provinces.tofufake

        Local media quoted a worker at one of the factories, who said they mixed soy protein, flour, salt and monosodium glutamate together, added ice and pigment, then poured the solution into boxes to be steamed, before packaging.

        Care was taken to ensure the packaging for the counterfeit products closely resembled the authentic tofu packages, to the extent of using anti-counterfeit laser film labels.

        When officials from the industrial and commerce bureau of Dongxihu district, Wuhan raided one of the illegal factories in the city’s Zhanggongdi area after receiving a tip-off, they found production equipment worth more than US$58,750 (CNY300,000) and stocks of raw material.

        Chinese farmers discovered how science can go bad after fields of watermelons exploded like "land mines" after being over-pumped with growth chemicals.

        The chilling chemistry calamity struck after a group of 20 farmers in Jiangsu Province used a growth accelerator for the first time during a period of heavy rains.

        That caused hundreds of groaning melons to pop like balloons, state broadcaster CCTV reported.

        "On May 7, I came out and counted 80 but by the afternoon it was 100," said farmer Liu Mingsuo. "Two days later I didn't bother to count anymore."

        Housewives across China are fretting that their watermelons are not safe to eat after state media reported melons were being injected with a plant growth stimulant called forchlorfenuron, raising fears of yet another food safety scandal.

        “I don’t know what I can eat after this watermelon explosion event,” said one user on Sina’s microblog platform, which is China’s biggest online comment forum.

        Watermelons are ubiquitous in the Beijing summer, when most households keep a chilled melon in the fridge to alleviate the summer heat. But this year the innocuous fruit has given rise to its very own food safety scandal.

        In the city of Danyang, near Nanjing, watermelons planted across 115 acres of land split open after a heavy rainfall, state media reported. According to Wang Liangju, a professor at Nanjing Agricultural University who inspected the damaged crops last week, the melons burst open because a plant growth stimulant, forchlorfenuron, was applied too late in the growing cycle.

        The burst watermelons follow on the heels of several food safety scandals this year, from tainted pork, to “recycled” cooking oil, to rice laced with heavy metals. Even three years after the melamine scandal that poisoned thousands of children with toxic infant formula, food scandals have continued unabated and public paranoia over food remains high. In Beijing, some upper-middle class urbanites have even taken to growing their own small plots of vegetables outside the city to ensure their quality.

        The exploding watermelon phenomenon has been well-known in Jiangsu province for years, but it captured national attention with a TV report that aired Monday.

        “Everyone in the Nanjing area calls this variety the “exploding watermelon” because it has such thin skin that it will easier break open when you try to cut it,” Wang said, adding that this particular strain of melon had been imported from Japan.

        The chemical applied to the watermelons is commonly used around the world to stimulate fruit growth. In the US it has been linked to kidney inflammation in rats, according to the US environmental protection agency.

        While exploding watermelons may not be the new melamine, they point to a greater challenge for Chinese agriculture: regulating the use of fertilisers and pesticides. “Chinese farmers, whose education levels are generally low, should be told when and how to use plant hormones, fertilisers and pesticide,” said Wang.

        Most Chinese farms are small, family-run plots, and farmers often assume that more fertiliser, or more forchlorfenuron in this case, is always better. Overuse of fertiliser and pesticides has in many areas stripped the soil of nutrients or made it too acidic, as well as contributing to river and lake pollution.
